Easy and Healthy Mexican Breakfast Cups
A healthy diet is always important to me, but it is even more so when I am pregnant. Thanks to AllWhites® 100% Liquid Egg Whites for making eating healthy even easier and more convenient during my pregnancy with their fat-free, cholesterol-free and high in protein liquid egg options.
My favorite easy and on-the-go breakfast and lunch recipe are these easy mini-tin mexican egg muffins that are not only tasty but very healthy.
1 carton of AllWhite® 100% Liquid Egg Whites
1/4 cup of milk
1 TbsTaco seasoning
1 cup Cheddar cheese
Salt and pepper to taste
Preheat oven to 375°
Spray muffin tins
Cook chorizo and peppers.
Transfer ingredients to a mixing bowl and add 1 carton of AllWhite® 100% Liquid Egg Whites,
1 tbs of taco seasoning, cheese, salt and pepper.
Pour egg mixture into muffin tins and bake for 20 minutes
Finish with salsa and sour cream.
