Paleo Chicken, Broccoli and Cauliflower Rice casserole with Tyson


I'm four weeks away from having our second son and I know that life is going to drastically change.I will be pulled in all directions between my two year old son and the newborn and I will have very little time to breathe, yet alone think about the gym, getting back in shape or cook.

But I am prepared for both by stocking my freezer full of healthy, paleo, casseroles that are not only healthy to eat but easy and quick to prep. My favorite is this Paleo Chicken, broccoli and cauliflower rice casserole.

First I head to my favorite Sam's Club and pick up all of the essentials such as a huge bag of Tyson® Frozen Chicken Breast. I love being able to buy Tyson® Frozen chicken Breast in bulk because it makes meal prepping so much easier and I love shopping at Sam's because honestly the savings are great but the carts are huge! As a mom with a big toddler, and a newborn in a carseat I need an extra large cart to hold them and still have room for food!

Chicken, broccoli, cauliflower rice casserole

I love a quick casserole and especially one that is good for you and filling.

My chicken, broccoli and cauliflower rice casserole is high protein and low carb, cheesy and yummy. It is the best recipe and so easy to do since it is a casserole and basically a one-pot meal.

Ingredients

Tyson® Frozen Chicken Breast

Frozen broccoli

Frozen rice cauliflower with roasted garlic

Shredded cheese

Onion powder

Garlic salt

Directions

Bake chicken until cooked through then cube.

Meanwhile, mix frozen broccoli, cauliflower, 1 tsp of onion powder and garlic powder and 2 cups of shredded cheese

When chicken is done, cube it and add it to the mixture

Spray a 9x9 pan and add the mixture, topping with more cheese.

Back at 350 for 25 minutes
